Excuse My Garlic Breath…

You know what is one ingredient that is just essential in cooking? No, it’s not kabocha. Or cheese. Or runny egg, either. Think about it. It’s garlic.

Have you ever seen a recipe (a good recipe, for that matter) that doesn’t have garlic in it? Even if it doesn’t ostensibly have garlic in its natural clove form, it’s probably got some sort of garlic in another form, whether in powder, or blended into a paste like pesto or gochujang.

It isn’t usually the main flavor. It’s usually hidden in the background, bringing out the best and strongest flavor within the other center-stage ingredients. But without it, the dish falls apart. Something just doesn’t taste right, and the result turns out bland and unsatisfactory.

Garlic isn’t just a flavor-enhancer. It’s freaking good for you. So good, in fact, that it’s been used a medicinal herbs since ancient times. At that time, people probably didn’t know the exact properties of garlic that made it so nutritious—they just knew it was potently effective in treating and healing people. Now, it’s been scientifically proved that garlic can lower cholesterol, prevent dangerous blood clots, reduce blood pressure, prevent cancer, and protect against bacterial and fungal infections. Oh, and did I mention it makes food taste good?

But it’s safe to say that many people take this amazing miracle herb for granted. And I think it’s extremely interesting that when God created this particular plant, He made it obscure and plain. It’s not even visible; it has to be dug out from underground. The color is dull. It’s not even a pure, brilliant white, but some kind of boring grayish color. It kind of smells funny, like a mild fart. It’s sort of annoying to peel, too. Most people just pound the hack out of it to get to its pulp.

So isn’t it amazing that this mistreated, ugly, overlooked thing can be so integral and beneficial to us? I love looking at nature in a different way like this, because I get to see God’s heart and intention behind every living organism. Some people complain about how God hides Hiimself and has made Himself inaccessible to humans…but I totally disagree. God’s personality, wisdom, love and desire are so evident through all creation. You just have to open your eyes enough to see and feel it.

Today’s dish, of course, is going to feature garlic. In fact, I’m going to be using a whole head of garlic…and then blend it with its cousin, the onion. This dish is not for the faint in heart, I can tell you that!

Miso Onion-Garlic Soup (or French Onion Soup, bastardized)

  • 1 head garlic (whole!)
  • 4 huge onions, quartered (I used both red and yellow)
  • olive oil
  • 1 heaping spoonful white miso paste
  • 1 medium green apple, chopped
  • pinch dried herbs
  • beef broth
  • apple cider vinegar (about 1/2 cup?)
  • cream, or half-and-half
  • corn bread (I used the one in a stuffing box)
  • stilton cheese with apricots (optional)
  • cheddar cheese (not optional, unless you have Swiss or Gouda)

First, wrap the garlic head with foil with a few drops of water:
IMG_2601 Next, spray a baking pan with olive oil, and dump the onion quarters and the foil-wrapped garlic on it. Sprinkle some olive oil on top. Roast at 450 degrees for about 30 minutes, or until the onions are nice and soft:
IMG_2602 Unwrap the garlic:
IMG_2603 Now that it’s roasted, it should be easy enough to extract the pulp from the bulb:
IMG_2604IMG_2605  Toss the onions and garlic into a big pot:
IMG_2606 Turn up the heat, and add in the miso paste, apple, dried herbs and pour in the broth until properly covered.
IMG_2607 Bring to a boil, then simmer. Pour in the apple cider vinegar, taste and test. Add more if you want.

Keep on cooking the mixture until everything is nice and soft, adding more broth as you go, about 20 minutes. Then ladle out half the mixture into a blender (try to get the bigger onion pieces if you can):
IMG_2609 Blend until sort of smooth. Pour back into the pot, and pour in a bit of cream or half-and-half:
IMG_2610 And you’re done! When you’re ready to serve, ladle the soup into an oven-proof bowl, top with the cornbread, layer on both cheeses, and then broil it in the oven for about 10 minutes.

This is the “cornbread” that I used:

IMG_2614 Now look at that toasted cheese and tell me that doesn’t look amazing!

I served it with a side salad:
IMG_2613 Spinach, sliced green apple, cottage cheese, dried pork floss, and sunflower seeds, dressed in a homemade honey-mustard dressing.

And pop chips!

IMG_2620 Remember when I raved about the French Onion Soup at Doughboys Cafe? Well, that soup ain’t got nothing on this one!
IMG_2615 It was super, super, super amazing. Definitely not the authentic French onion soup, but…dare I say it? Better. There, I said it. I hope I don’t have any Francophiles sending me hate mail now, but I truly do think this tastes super super super fantastic!
IMG_2617 The apple in there made it slightly sweet, and apple cider vinegar gave it a tangy kick, and the miso made it so much…ummmmmami-rich. Intense, very very intense.
IMG_2618 And don’t forget the whole head of garlic in there! Sweet, pungent, and incomparably flavorful garlic and onions!
IMG_2625 The stilton under there was a stroke of genius. I pinched Mimi’s stock from Trader Joes. It has bits of dried apricots in there to keep things interesting. It does melt and become gooey like Gouda or cheddar, but it kind of sinks into the soup, intensifying the flavor. Oh, oh heeeaven~
IMG_2623 The pop chips were provided by the generous fellows at pop chips company:

IMG_2522 Now that is some seriously smart marketing.

  • Cheddar
  • Sea Salt & Vinegar
  • Sour Cream & Onion
  • Salt & Pepper
  • Original
  • Barbeque

You know how you get that greasy, grimy coating on your lips after eating regular potato chips? Don’t you hate that? It’s one of the reasons why I hate potato chips, because they give my mouth a rash. My skin is sensitive to salt and grease, and the combination of both of that makes me look like I fooled around with my mom’s lipstick.
IMG_2622 But you don’t get that with pop chips. Because they’re not fried, they’re popped. Duh, if you haven’t figured that out already. Anyway, I love pop chips. It’s light, crispy, and really flavorful. So I can actually finish the whole bag without skin troubles!

so jealous of your popchips, they really hooked oyu up! yum i love roasted garlic although i’m usually too lazy/impatient to make it myself. but the best hummus i ever had was with homeroasted garlic! the soup sounds great

OMG OMG OMG I LIVE FOR GARLIC!!! In fact for dinner just now I had a custom wokfry where I literally put in 1/2 cup minced garlic…that’s a shitload of garlic and I hope I won’t be seeing any hot guys anytime soon because my pores will be reeking with pleasure for a while ;)

WOWZA. Once again, your creativity and willingness to use just about any ingredient astound me. I love that you embrace all foods, because I feel like a lot of the food blogging world follows certain trends about food (don’t get me wrong, I LOVE almond butter, oatmeal, and squash, but there are other things you can eat, you know?). I am SO excited about your recipe challenge, because you are someone who loves flavor and satiety above all else. I am in the process of putting together a recipe that involves lamb shanks (definitely delicious, definitely nowhere to be seen in the blog world), squash (definitely delicious, definitely EVERYWHERE in the blog world), and some die-hard Singapore hawker food inspiration.

I love your bastardized soup! Love the title too. Very cute. It looks so authentic, right down to the right bowl and everything.

FYI, Trader Joe’s has fresh garlic already peeled in the produce section. I highly recommend it to avoid garlic smelling hands. :)

Mmm garlic! My favorite way to use garlic is minced in everything. I also love roasting it as you did and then it gets gooey and can slip velvety smooth into dishes. I think you’re right – there’s rarely a dish I make that doesn’t start w/ peeling a few cloves of garlic! hehe

I love roasting garlic and eat it on it’s own, or mince it and steam it with rice. :)

I’ve walked past the popchips countless times in the market and consider buying them every time but never do. Next time though I’ll keep your recommendation in mind and purchase a bag for my own personal taste testing. ;)

honestly the fresh smell of garlic prepared anyway is the best smell in the world! I always take a big whiff of my mom’s minced garlic in the fridge. But seriously garlic in anything makes it taste better, no i’m lying. i had it in japanese curry and it was unpleasant!

I LOVE garlic. I don’t know where’d my cook be without it. It’s an essential ingredient in my house. I tend to go through at least a head every two week. I get the big kinds. I don’t really have a favorite way to eat it as I’ll eat anything that has garlic in it. Have you heard of the Stinking Rose? It’s somewhere here in Beverly Hills. I haven’t been to it yet, but it’s a restaurant dedicated to the garlic.

One thing in nature I appreciate. Plants and flowers. I have a bit of a green thumb.

I LOVE garlic! I use it as much as possible! I had a garlic mishap in the grocery store on Friday. A touched a jar of pre-minced garlic …. and it was leaking, but I didn’t know, and I had garlic juice all over my hand. I touched my hair, then walked around the store wondering why I smelled something awful everywhere I went. It was me.

I love garlic too. On basically anything. Just yesterday my boyfriend was yelling at me to close a bag of garlic bagel chips because it was making the whole room smell. I didn’t see anything wrong with a room smelling of garlic! I guess we have different tastes lol.

I always appreciate the peaceful sounds of nature. A river running, leaves crackling in the breeze, a bird chirping, etc. :) What a wonderful thing to think of while cooking – how even garlic is wonderfully made. And delicious ;)

Garlic and Onion Soup!!! I love roasted garlic, even though I know I can’t eat too much :-D the soup looks really thick isn’t it? I prefer this version with the strong special scent from Garlic:-D btw, the serving bowl looks exactly like the one I had in the restaurant the other day :-P
We are stuck by the snow for almost a week, and my fridge is empty except for 1 yellow onion – gotta make this soup today! haha

it’s extremely rare that i make any sort of dinner without garlic. it’s the best way to flavor a dish without adding salt or fat! the soup look OUTSTANDING! i’ve been craving french onion soup for quite a while now. great garlicky post!!

Mmm sounds like such a good combination of flavors! Do you think veggie broth would make an okay substitute for beef? I know it doesn’t have the same smokiness. I don’t think miso paste should be boiled, maybe it could be added to the soup later on? Love the apple touch!

Are u kidding?? That is SERIOUSLY NOT basterdized french onion soup. My gosh the roasted garlic and onions look insanely delicious…I totally thought that your pictures of the soup and popchips were straight from a restaurant.

My favorite way to enjoy garlic is definitely roasted and WHOLE.
