You know what is one ingredient that is just essential in cooking? No, it’s not kabocha. Or cheese. Or runny egg, either. Think about it. It’s garlic.
Have you ever seen a recipe (a good recipe, for that matter) that doesn’t have garlic in it? Even if it doesn’t ostensibly have garlic in its natural clove form, it’s probably got some sort of garlic in another form, whether in powder, or blended into a paste like pesto or gochujang.
It isn’t usually the main flavor. It’s usually hidden in the background, bringing out the best and strongest flavor within the other center-stage ingredients. But without it, the dish falls apart. Something just doesn’t taste right, and the result turns out bland and unsatisfactory.
Garlic isn’t just a flavor-enhancer. It’s freaking good for you. So good, in fact, that it’s been used a medicinal herbs since ancient times. At that time, people probably didn’t know the exact properties of garlic that made it so nutritious—they just knew it was potently effective in treating and healing people. Now, it’s been scientifically proved that garlic can lower cholesterol, prevent dangerous blood clots, reduce blood pressure, prevent cancer, and protect against bacterial and fungal infections. Oh, and did I mention it makes food taste good?
But it’s safe to say that many people take this amazing miracle herb for granted. And I think it’s extremely interesting that when God created this particular plant, He made it obscure and plain. It’s not even visible; it has to be dug out from underground. The color is dull. It’s not even a pure, brilliant white, but some kind of boring grayish color. It kind of smells funny, like a mild fart. It’s sort of annoying to peel, too. Most people just pound the hack out of it to get to its pulp.
So isn’t it amazing that this mistreated, ugly, overlooked thing can be so integral and beneficial to us? I love looking at nature in a different way like this, because I get to see God’s heart and intention behind every living organism. Some people complain about how God hides Hiimself and has made Himself inaccessible to humans…but I totally disagree. God’s personality, wisdom, love and desire are so evident through all creation. You just have to open your eyes enough to see and feel it.
Today’s dish, of course, is going to feature garlic. In fact, I’m going to be using a whole head of garlic…and then blend it with its cousin, the onion. This dish is not for the faint in heart, I can tell you that!
Miso Onion-Garlic Soup (or French Onion Soup, bastardized)
First, wrap the garlic head with foil with a few drops of water: Keep on cooking the mixture until everything is nice and soft, adding more broth as you go, about 20 minutes. Then ladle out half the mixture into a blender (try to get the bigger onion pieces if you can): This is the “cornbread” that I used: I served it with a side salad: And pop chips! You know how you get that greasy, grimy coating on your lips after eating regular potato chips? Don’t you hate that? It’s one of the reasons why I hate potato chips, because they give my mouth a rash. My skin is sensitive to salt and grease, and the combination of both of that makes me look like I fooled around with my mom’s lipstick. Thank you, pop chips, for giving me the perfect snack…and the perfect complement to a wonderful meal! Okay, I’ve really got to head back to my books…I’ve got a mid-term tomorrow, and I haven’t done a single minute of studying. Urgh…Talk to you all soon! Question of the day: Name one thing in nature that you really appreciate. Also…favorite way to eat garlic? (Hopefully not before a date!)
Next, spray a baking pan with olive oil, and dump the onion quarters and the foil-wrapped garlic on it. Sprinkle some olive oil on top. Roast at 450 degrees for about 30 minutes, or until the onions are nice and soft:
Unwrap the garlic:
Now that it’s roasted, it should be easy enough to extract the pulp from the bulb: ![]()
Toss the onions and garlic into a big pot:
Turn up the heat, and add in the miso paste, apple, dried herbs and pour in the broth until properly covered.
Bring to a boil, then simmer. Pour in the apple cider vinegar, taste and test. Add more if you want.
Blend until sort of smooth. Pour back into the pot, and pour in a bit of cream or half-and-half:
And you’re done! When you’re ready to serve, ladle the soup into an oven-proof bowl, top with the cornbread, layer on both cheeses, and then broil it in the oven for about 10 minutes.
Sometimes, you need a shortcut here and there!
Now look at that toasted cheese and tell me that doesn’t look amazing!
Spinach, sliced green apple, cottage cheese, dried pork floss, and sunflower seeds, dressed in a homemade honey-mustard dressing.
Mimi asked for the cheddar flavored one:
I went with the salt & pepper:
Altogether now:
Remember when I raved about the French Onion Soup at Doughboys Cafe? Well, that soup ain’t got nothing on this one!
It was super, super, super amazing. Definitely not the authentic French onion soup, but…dare I say it? Better. There, I said it. I hope I don’t have any Francophiles sending me hate mail now, but I truly do think this tastes super super super fantastic!
The apple in there made it slightly sweet, and apple cider vinegar gave it a tangy kick, and the miso made it so much…ummmmmami-rich. Intense, very very intense.
And don’t forget the whole head of garlic in there! Sweet, pungent, and incomparably flavorful garlic and onions!
The stilton under there was a stroke of genius. I pinched Mimi’s stock from Trader Joes. It has bits of dried apricots in there to keep things interesting. It does melt and become gooey like Gouda or cheddar, but it kind of sinks into the soup, intensifying the flavor. Oh, oh heeeaven~
The pop chips were provided by the generous fellows at pop chips company:
I was charmed by the way they packaged it.
Now that is some seriously smart marketing.
They sent me six different flavors:
But you don’t get that with pop chips. Because they’re not fried, they’re popped. Duh, if you haven’t figured that out already. Anyway, I love pop chips. It’s light, crispy, and really flavorful. So I can actually finish the whole bag without skin troubles!
Love them dipped in the soup too!
My favorite so far is the Sea Salt & Vinegar:
And the Barbeque!

I want to eat the bastardized french onion soup- then go out to a bar and make out with random strangers- brilliant recipe!
I love garlic in everything. When you bake them in the oven like you did, they taste awesome when spread on bread. Those popchips are good! I had the BBQ ones and they are addicting.
I LOVE Garlic, my mom has cooked with it ever since I was little, It’s a stable in everything and it makes the food smell so good (my breath, another story…)
I just tried pop chips for the first time yesterday and i really really liked them- I had barbecue and enjoyed it a lot! I can’t wait to get my hands on those other flavors- you are right, their packaging is so smart!
I am a total garlic addict myself. One of the many reasons I love the WF salad bar is because they offer roasted garlic cloves as a topping–you better believe I pile on that goodness!
The day I met my boyfriend, I’d eaten a huge pile of garlicky hummus beforehand. He’s also had to hang out with me after I ate piles of red onion in my raw diet. Such a good sport, hehe.
This soup looks amazing. I’m not a huge French onion soup fan, but my sister LOVESLOVELOVES it. I gotta send her your way
That soup looks ridiculously good! (I could eat roasted garlic straight I think…..) What is pork floss?
Yum! Garlic is one of my most favorite things. My motto is the more the better!
Your soup looks delicious too!
I looove garlic! I love it’s smell and I love it’s taste. Pickled garlic is so delicious but until a month ago I would never even have considered trying it.. sounded unappetizing. I was so wrong. I’ll probably eat garlic cooked any way or in any product. My favorite hummus at the moment is currently Garlic Roasted – pure win.
I’m not a usually a chip fan either but I tried a bag of those Popchips and really liked them. I think it was the Seasalt one.. so good. Definitely finished that bag off by myself, no shame.
Wowie Zowie. I LOVE garlic and this soup looks seriously to die for!
Roasted onions and garlic just take on a whole new life. I wish onion/garlic breath wasn’t so offensive, because I could eat roasted garlic cloves like candy!
That is one intense-looking garlic soup. I do love roasted garlic, though I am pretty afraid of garlic breath.
before a date!! haha jus tkiddding. love how you used garlic and thanks for all the info- i didn’t know most of it, to be honest!! pop chips are the best
French onion soup-bastardized-love it!!! I will so be trying your method. I have been wanting to make home made french soup for awhile so we shall see.
I too put garlic on pretty much everything–salad, eggs, sauces, soups, meats and when cooking veggies. I can’t get enough of it and use that I am Italian as an excuse
I would say either garlic or red pepper flakes-I put it on everything!
LOVE me some popchips! they are such great dippers-GREAT dipped in greek yogurt..yum! i LOVE sour cream and onion flavor tho-thats my fav
I love roasted garlic with olive oil and a baguette. This soup looks AMAZING. And I heart pop chips. Yum yum yum, this post made me hungry!
Hmm I love garlic… and eat tons of it..
HOT DIGITY DAMN!!! This post is making me salivate like not other. You need to write your own magazine, Sophia. Is that something you would eventually want to do? You need to. A cooking magazine!
My favorite element from nature that I couldn’t live without would have to be pepper and garlic (seriously). I put both of those spices in EVERYTHING (notice on my posts, I’m sure). I unfortunately can’t eat whole garlic, only the powder (FODMAPS). What a joke, right?! Whatever, the powder is awesome, and I can eat little amounts of the whole clove. I would FOR SURE eat this French onion soup.
Yum, I love garlic. I’ve never roasted it though.
I always get emails from Popchips and I always think they’re going to offer me some free stuff, but it’s always some mass email instead. Boo. (Popchips, are you reading this? I like samples!)
Ooh yeah I love roasted, caramelised garlic and yes how good is it that it’s good for you too?
Thank you for this post! I love roasted garlic, and I’ve never known how to properly roast it. You soup looks divine
I was sent Pop Chips to review too. I was also a huge fan!
I can’t say that I’ve ever seen garlic described so graphically or amusingly. heehee.
Roasted garlic is the best. You can spread it on anything or stir it into anything, and it’ll make it 10 times better.
Vegetables!!
i really do appreciate the fresh crunchy naturally sweet greens tht nature produce.
Though I cant say ALL veg taste like tht anymore (must be the pesticide!) I will stop & chomp in amazement whn I actually eat some freaking good greens!
I love the deep fried thinly sliced garlic tht some restaurant sprinkles over the teppanyaki jsut before serving! Yums..
And roasted garlic, mashed & a bit of salt for taste.. spread on BREAD!! Hahaa
Mayb even with mashed chick peas, mashed green peas? I dunno! But i think it’ll work!
Oh Sophia, how I’ve missed you! What an amazing recipe! LOVE IT and I love garlic. The more, the better! I just had a big bowl of Thai chicken soup the other night with lotsa minced garlic. It was perfect for a cold, snowy night. But your soup takes the cake (or soup) – it’s incredible! How do you come up with these flavor combinations?! Crazy! Good luck on your mid-terms. My favorite way to eat garlic? I love me some cheesy garlic bread or plain ol’ garlic, olive oil and parmesan cheese on hot pasta! Have a nice weekend!
I absolutely adore garlic! At home, we follow my dad’s Malaysian hometown style of eating it – chopped fine with light soya sauce and eat with anything and everything! I never get tired of it. Haha…
Pop chips are yummy & your soup = total food porn.
ha, sometimes I worry that my coworkers are going to put me into another room because I think I always must smell like onions and garlic since I cook with them so much!
Excellent soup!! I have no fear of garlic, love it! Good thing I am married and not dating anymore, perhaps then I would be embarrassed to have a big bowl of this soup. Great addition with the cornbread and apricot stilton!
I LOVE garlic and use it all the time! I’ve been wanting to try those pop chips; I hear they are quite addicting.
I loved your ode to garlic!! So perfectly, wonderfully described! I couldn’t agree with you more about the wonders of garlic – I actually wrote an ode to garlic for a poetry class in college…
One of my favorite recipes to fix at home is garlic mashed potatoes, made with 60 cloves of garlic!! I absolutley can’t wait to fix your gorgeous soup recipe – it sounds positively transcendental!!
GAH! Can I just tell you one more time how much I love your food pics?? I want to print out that charred garlic clove and hang it over my bed. I love it so much. What a weirdo
Seriously, though I love garlic and luckily so does my husband so we can stink it out together
Wow, your “french onion soup” looks SO much better than ones you could get in a restaurant! And I am in love with popchips — my favorite is the bbq flavor.
My current favorite way to use garlic is to make my own garlic bread
You miso onion-garlic soup seriously looks good! I love roasted garlic! Yummy!
Okay, just have me over for that soup. I want to be your taster.
I’ve never had pop chips but I always hear about them and how amazing they are.
i know what you mean about garlic! my roommate always puts it down first thing when she cooks and the whole house smells amazing!!

i’ve been gone too long! missed your posts
garlic is fabulous, especially roasted garlic, yum… this soup might make me a french onion soup lover
wanna hear something crazy?! my cousin, who used to be the food editor for bon appetit, was allergic to garlic!!! can you believe it?!?! so it IS possible to eat delicious food without garlic (everything she made for us was garlic free and insanely amazing) but i agree – it is pretty darn great.
Yeah, so I’m pretty much drooling all over my keyboard…
One of my favorite things that comes from nature would probably have to be nuts. Nut butters are just amazing
Although to be honest I just love everything that comes from nature!!
I love to have garlic in everything, so I don’t know that I would have a favorite way to eat it… garlic bread is pretty good though
Oh my gosh that roasted garlic looks divine. My favorite way to eat garlic is sauteed with greens, raisins, olive oil, s&p, balsamic vinegar, and topped with freshly grated parm. So delicious. Your soup sounds incredible.. seriously love your description of the flavors. And popchips!! It’s weird because salt & vinegar was one of my favorite flavors and I usually do NOT like that flavor of chips. They’re so airy I love it
I really appreciate the sun
Yummy, that soup looks awesome! I really like pop chips. They are pretty darn good.

I feared garlic till recently bc that breath is just wrong. However, last week I discovered roasted garlic and holy crap… I’ll smell.
Ahh, that garlic looks to die for!! I freakin’ love garlic on anything and everything! I really like Pop Chips, but the flavors…not so much. The original are my favorite!
Yay for garlic! Now that’s a great soup – and the miso in it is inspiring!
I love garlic in my marinara sauce or on some naan bread the best!!
I LOVE flowers!!
