How Calbi BBQ Got Its Ass Kimchi-ed

If you’ve been following me on Twitter…you might have guessed that I’ve been a teensy weensy bit stressed lately. I’ve been having a lot of work piled up lately.

Because the books I ordered came in late, I’ve been on a mad-hatter rush to catch up with all my missed readings. Meanwhile, I’ve been hit with a serious case of writer’s block for my essay on Evolution, especially because I’m finding it hard to support my theory without sounding like a close-minded religious fanatic. Add to that the fact that it is the long weekend and all my required interviewees for a school newspaper article due Tuesday morning are out of office, and the fact that coffee does not work for me anymore, it’s no wonder I became one pent-up ball of frustrated stress-cords.

At times like this when I’m having trouble calming down and communicating with God, I do what every girl in my situation would do. Go cry “boo hoo” and freak out at my daddy.

I sent him an email full of exclamation points and expletives. Don’t worry, my dad is cool with expletives because I am very creative with them and he doesn’t know enough English to figure out that they are bad swearing words.

Anyway. My dad has always been the best person to turn to in a situation like this, and he didn’t fail me again. He immediately responded with an email full of broken English, but I got the jest of what he was trying to tell me. Here’s what he said (except I polished up all his weird grammatical errors):

“Dear daughter,

‘Who are you?’ is always more important than ‘What are you doing?’. Don’t live for the sake of doing something, but live for the sake of enjoying a truly meaningful life!

No matter what you are going to do, always remember to pay attention to ‘How is my spiritual, emotional and physical condition? What kind of condition am I in, as I do what I am doing right now?’

An hour’s work in good condition is far better than ten hours’ work in bad condition; and an hour’s pleasant work, in which you are enjoying what you are doing moment by moment, is much better than ten hours’ forced work of stressed yawns!”

My dad hits the nail in the head once again. Why am I making myself more stressed than I need be? Forcing myself to do work under stress is not going to get me anywhere.

Yesterday I took the day off and just let myself…relax. I went to church, I hung out with awesome friends, and I had the most fabulous meal ever with them (which I will blog about soon later). And when I came home, my mind, spirit and body was refreshed, clear as mountain spring water.

And you know what? I sat down in front of my laptop, and I started cranking out my essay again, but this time…I enjoyed what I was doing. And ho, ho, ho! Guess what?! I finished my essay! Woo-hoo!

Never underestimate the power of the mind. When you set your heart to actually enjoy what you are doing instead of merely enduring it, you’ll be pleasantly surprised and how much more effective and efficient you can be.

Maybe that’s why I make good food (in my opinion). Because I enjoy cooking, the passion and delight in me transfers to my food. Today, Mimi joined me for a Korean-Mexican throw-down against Calbi BBQ. And boy, did we ever kick their ass!

We came up with two ideas: A nori taquito, and a Spicy Chicken and Guacamole Tostada. Hang on to your seats, because you’re in for an amazing foodie ride across the continents for the combination of two crazy-delicious cuisines!

Challenge #1: Nori Taquito (inspired by Mimi)

  • 2 sheets nori (unsalted)
  • 4 slices bacon
  • 1/2 cup chopped kimchi
  • 1/2 cup sharp cheddar cheese
  • 1/4 cup diced scallions

Start frying up the bacon until nice and crispy, then toss in the chopped kimchi and fry them up together until the bacon absorbs all the juices from the kimchi and the kimchi gets nice and hot.
IMG_0440 Next, lay out the nori and ladle the kimchi-bacon mixture on to the edge of it. Lay on the cheese and scallions, roll the taquitos up.

Bake the taquitos in a 350 degree oven for about 7-8 minutes until nice and toasted.
IMG_0441 Now this was really interesting. The filling was HEAVENLY with the salty bacon and kimchi and the sharp cheese, and it tasted great, but the texture of the nori became soggy after sitting about for sometime.
IMG_0444 Next time, I’ll stick to plain ol’ tortilla, though the nori concept was really creative. Or I’ll have to eat these immediately after taking them out of the oven to keep the crunchy and dry texture of the nori. I’ll rate these 8/10.

Challenge #2: Spicy Chicken and Guacamole
Tostada

Gochujang marinade:

  • 1 tablespoon gochujang
  • 1 tablespoon soy sauce
  • 1 tsp vinegar
  • squeeze of 1/2 lime juice
  • 1 tsp honey
  • 1-2 tablespoon water to taste

Whisk everything together until smooth. Set aside.

Guacamole (made by dear Mimi):

  • 2 small avocados, mashed
  • 1 tomato, diced
  • 1/2 red onion, diced
  • 1 Laughing Cow cheese wedge
  • squeeze of lime juice
  • cumin
  • salt and pepper

Mix everything together. Mash and bash.

The rest of ingredients:

  • 4 corn tortillas
  • 1 cup grilled chicken
  • 1-2 cups fresh baby spinach
  • guacamole (see above)
  • 1/2 cup crumbled goat cheese
  • sprinkle of cayenne powder (optional)

Toss the gochujang marinade with the chicken and the spinach. Set aside for the flavors to meld.

Meanwhile, spray both sides of corn tortilla with oil and bake in a 350 degree oven for about 10-15 minutes, flipping them over half-way until golden and crispy.

Layer the chicken-spinach mixture onto each tostada. Plop a dollop of guacamole over each, sprinkle with goat cheese, and even some cayenne pepper if you’re a spice-loving mama.
IMG_0448 Amaaaaaa~aaazing! Hark, is that angels I hear singing in my head while I bit into this? I heard no angels while I was eating Calbi BBQ’s tacos. Heaven is on our side, so I think the judgement is pretty obvious…Mimi and Sophia reigns supreme!!!!

LOVE all the flavors in there. It was funny how our conversation just suddenly stopped as we crunched and munched with silent swoons of delight.

MOAR! MOAR! my head screamed, though my belly was getting satisfactorily full. Two thumb up, indeed! I give it 10.5/10!! Extra points because I get to share the glory with Mimi!

Yes, yes, I know Calbi BBQ probably don’t give a crap about two college students who claim to make better Korean-Mexican fusion than them, but today, the two of us walked with our heads swelled up with pride like balloons. In our own foodie world, we’re rockers!

Okay, everyone, I’ve gotta run and continue catching up with my reading. With such good food inside of my tummy, and having had such a great time with great company, I am now ready to tackle some essays by John Baptist Lamark. Okay, not tackle—‘ enjoy. That’s the key word here! ;-)

P.S. Does anyone think 19th century writers are a bunch of pompous know-it-alls trying to squeeze in as many SAT vocabulary words as possible into one page?

Hey hun, as you know I’m sort of in the same boat – studying again and getting used to the crunch! Your brain will take some time to adjust. I think your dad deffo hiot the nail on the head and really – in my mind it is quite pointless stressing about not being up to speed with EVERYTHING. In the future, at your job or maybe as a mom (if you want kids) you won’t be able to have everything down & structured all the time either – see this time as a learning curve on priorities and indeed taking a step back and making sure you take care of you.

I try to remind myself the world won’t end if I mess up an assignment or even *shock* fail a class. God/fate/life will always have a way of leading you somewhere even better, where you wouldn’t have gone had you been PERFECT (which is impossible anyway, haha).

U know wht? My friend is recently tryin to chg his life style and diet and hasd asked me to be his personal chef! Whoa! so cool!

I’m gonna feed him all the recipes that you have come up with! I;m sure he’ll love it!

Sadly, I don’t think I`ll be able to make it to FoodBuzz Blogger Festival this year. The deposit wasn’t as much as I had hoped, and I really don’t want to use my credit card to pay for the trip. I`m sure it`ll be a lot of fun, and hopefully I can make it next year!

Those are some very wise words from your father!

Last night I had a pretty major freakout session, and decided to wander around Fresh Market to calm myself down before I had a total meltdown. For some reason, walking around the little market with the smells of spices and herbs and looking at all of the gorgeous produce actually did calm me down a bit!

Hope you are a little less stressed! At least you have access to lots of yumminess…

I am a master procrastinator, and thus I stress out. I measure my life in how many days I need to survive. As in, “if I can just make it to X day, everything will be all right.”

Yoga helps me – but I REALLY like your father’s advice. Simple. Clear. I’m going to remember to ask myself “Who are you?” when I’m stressed. It is so perfect for so many situations!

Congrats on your essay! That really is great advice from your dad. When I’m feeling stressed out I either like to get some fresh air or cook! Both clear my mind ;)

LOVE your throw down creations! Do you think you’ll make a regular thing of your fusion food throw-downs? I think that could be fun!

When I’m stressed, nothing helps more than taking 5-10 minutes to do breathing exercises. Pranayama is one of the most useful things yoga has taught me!

hi-lo lovie! I totally feel you on being behind with work and feeling so overwhelmed with just WAY TOO MUCH stuff to do with school. It’s so funny how it all builds up in the matter of minutes. Exhausting, I tell you! Simply exhausting! Ick! haha

I think that turning to your dad was just the right thing to do. I, too, usually turn to the parental unit for those words of wisdom and a little love to help pick me up. Your dad sounds INCREDIBLE and oh so wise and it would be such a gift to hear him speak. I think he offered some very valid advice and Im so happy that he could shed some light on your situation. :) Yayy daddio!

And you NEVER cease to shock me with your culinary talents! You are one hot spankin’ chef missy! I just want to come on over and eat what you’re a cookin’! hehe Yummmy in the tummy is all I would have to say!

Oh and don’t you worry, I’ll be around enough for you to still love me and vice versa! ;)

Your dad sounds so much like my husband when I start to bang my head against my keyboard and complain about my blog. He says: “Do what you love doing and be true to yourself. If you are happy with what you are doing and how you are doing it, if it is a reflection of yourself and not what you think other’s want to see, then that is what is important.”

I always freak out in the beginning of the school semester because I look at all the work I have to do over the next few months and my head thinks I have to do it all right NOW. But then I calm down and tell myself that I have 3 months to get through it and I will get through it taking it one assignment at a time. I know it’s hard but you’ll get through it! I promise!

It actually makes me feel better to know that other students feel the same way I do about school work. Feel free to find comfort in my descriptions of daily head explosions on my blog.

Sometimes taking a break is the best and most productive thing you can do under stress. I like to think that my mind subconsciously ruminates on whatever I was worrying about so that when I come back to it, I am prepared and ready to take action! Which explains why your writer’s block went away after a day off. I am also a fan of the eating ice cream or baking method of de-stressing. Works every time.

So I know you think you want to be a journalist. I really do. But maybe you want to open up a restaurant. You are so inventive when it comes to food! I love your fusion dishes so much. Crazy good.

What do you do when you think you’re on the verge of freaking out from overloaded stress?

Breathe through the nose, slowly & quietly 50 times, count as you go, it lowers the heart rate, & concentrate hard on a time you were really happy & not stressed..maybe a holiday or a fun time with your family, it works…

Oh wow!! Both dishes look awesome, and I love the Korean-Mexican fusion concept. Bacon and kimchi together makes some sense in my mind. That sounds really good!!

When I’m stressed, I sometimes think about other times I’ve been stressed and then, using the previous examples, I remind myself that “this too shall pass.” That helps me. Sometimes I also walk through the worst possible outcome in my mind, and I often find that I’ve blown something out of proportion. It’s good to find new perspective. It sounds like your dad knows that well, and so do you. I’m glad you are feeling better and I’m glad you finished your paper. Woo hoo!! :-)

Poor Lamarck didn’t deserve quite the dressing-down that history has given him. I know that we are likely coming at the evolution issue from opposite sides, but I’d still be interested to read it if you felt comfortable with that, I can refrain from scientific commentary if you want. ;) I’m always just interested to see how people think, even if I know it’s not necessarily my view. Anywho, no worries either way, but feel free to email me if you have a question on Lamarck or anyone else in that arena.

And to relax when I am overwhelmed, I put on the iPod and walk my dog!
