I’ve been introduced to a new world today…both literally and figuratively. But I’m getting ahead of myself. Let me rewind to this morning…

Guess who I met for breakfast today? Natasha from 5-Star Foodie and Jasmine from Sweet and Fit! How lucky am I to live close to two of the most fabulous bloggers ever?

If you’ve ever been to Natasha’s blog, you’ll be bowled over by all her spectacular and out-of-the-world creations. She seriously comes up with the most stunning recipes ever, some of which to I found out derived from her own husband and daughter’s contributions! What a family of genius foodies! Natasha is also really warm and personable, and I wish all of you could have met her!

And Jasmine…she is just exactly like the name of her blog: so incredibly sweet, and so gorgeous. Even her voice has a sweet-honey melody to it. But life has not been so sweet to her…She only recently got discharged from Johns Hopkins Hospital for a rare combination of lupus and polymyositis…but she’s fighting on bravely, and I witnessed for myself her strong, cheerful spirit. Anyway. My friend Jane and I met them at this huge glorious supermarket called Wegman’s…And holy cow…where has this gorgeous place been all my life? I can’t believe I only live about 15 minutes drive away and this is only my first time visiting it…It’s decorated like an European market, and has a eye-popping selection of hot food bar, salad bar, sushi, and baked goods

Just like Whole Foods, except almost better (Coming from the #1-fan of Whole Foods, this is big). Yeah. I think I discovered yet another new territory to explore and salvage.

Okay, rave over. Let me recollect myself.

Right. We had a lovely time, talking about everything from food (duh) to dogs. Jasmine had to leave a bit earlier because of her poor dog waiting for her in the car and an appointment, but Jane and I continued to converse further with Natasha. And somehow we got to the topic of having kids as we talked about Natasha’s daughter, Hannah.

Kids. Oh, kids. People always get surprised when I say I never want to have kids. They get even more surprised when I add that I also  never want to get married.

I don’t know when I started having such vehement objections towards marriage and kids. When I was young I dreamed of marrying the perfect man and having three kids and living happily ever after. But now…the thought of getting married and giving birth and taking care of children gives me chills. I’ve shut my mind completely against that notion, and already have set my mind to be a spinster forever.

Perhaps it’s from my low self-esteem that I will never be able to find a guy who will love me. Perhaps it’s from the fear of losing my freedom, the scary idea of actually loving someone that much to spend the rest of my life with. Perhaps it’s the apprehension that God, in His justice, will give me horrible kids for all the grief I have given my parents as a daughter. Most likely, it’s the combination of all the above.

But hearing Natasha speak so proudly and lovingly about her daughter…and the pains she went through to get a child…it kind of opened my eyes to the possibility of having a child of my own. It also helped that Hannah (Natasha’s daughter) seemed like a perfect angel with multiple talents, and that Natasha talked about her with such joy.

Later Jane asked me if I changed my mind yet. At that time I still gave an ambiguous answer, but now, after much thinking…I decided it was stupid of me to close up my heart and mind already this young at age. Who knew how my future would turn out? And why not just be open to all options, instead of stubbornly rejecting them? I certainly don’t want to miss an opportunity to a great joy in life just because of my stubborn beliefs and ideas.

So. Thank you, Natasha, Jasmine, and Jane, for introducing me to a new place, and a new option, and new relationships. :-)

Anyway, it was already time for lunch when I got home, so I rummaged through my fridge for a quick-fix lunch. And look what I found in the back of my freezer:

Two packets of 7-months-old freezer-burned Boca patties…-____-;;;

Yeah. These are back from my days of fearing real meat. I no longer fear red meat though, and it was such a waste to just dump them, so I decided to cook my last meat-substitute burgers…

“Cheeseburger” Flatbread Pizza

  • whole wheat flatbread
  • 1/4 cup ketchup
  • 2 tablespoons soysauce
  • 2 cooked Boca patties, chopped
  • handful of grape tomatoes, sliced
  • 5-6 pickles, chopped
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 1/2 cup sharp cheddar cheese, shredded

Mix the ketchup and soy sauce to make an instant BBQ sauce. Spread it all over the flatbread, then top on the Boca patties, tomatoes, and pickles.
Mix together the Dijon mustard and mayo, then drop it by spoonfuls evenly around the pizza. Pile on the cheese.
Bake at 350 degrees for 10-15 minutes until cheese is melted and bread is crispy.

I swear to God, this smelled exactly like McDonald’s cheeseburger. But much healthier!

The only thing is I didn’t care much for the taste of Boca patties. I would
rate this a solid 9.5/10 if there were real hamburger on top.

The pickles were a nice addition. I know, you’re thinking, pickles on pizza? But really, it is such a nice tangy bite with the burger and the cheese!

The best part (besides the cheese) was the random spots of mustard/mayo mixture. Totally hit the spot!

Altogether yummmyyyy~ But I’m never buying Boca again. I hope I don’t offend any vegetarians/vegans out there, but I’d rather have real meat or no “meat” at all…No imitation for me!

Anyway, I hope you all had a good Tuesday…sorry for the late post, I just came back from Discipleship Training…and waited an hour and a half while my dad was talking to one of the ladies in our church who were asking some spiritual question…Sigh…such is the sacrifice I have to make as a pastor’s daughter…

omg, your food always makes me so hungry at my desk!! hahah. i’ve never been to a wegmans, but it sounds fantastic! right now, my favorite grocery store is that manhattan fruit exchange place i went to in chelsea market – AMAZING!

btw, the only boca items i like are the flame grilled burger and the sausage links…but really, who wouldn’t prefer a nice beef or turkey patty??

I used to be very close-minded about kids (still kind of am) but I have been in a few relationships where I felt so close to the person that the idea of children was appealing. I’m not shutting the door, but I’ll only do it if I truly want them. And I would definitely consider adoption.

The pizza sounds fantastic!

I was always a lot like you — never wanted to get married, never wanted to have kids. I still don’t know how I feel. I got married, but that didn’t work out so well and now I see how much I really do love my freedom. But, I want to share my life with someone, so I’m not closing off the possibility. With kids, I realize that they take so much energy. I still feel very selfish, like I have work to do on myself. I don’t know how much I’d be able to give to a child. So, we’ll see. I’m open to it, but I really don’t know yet.

Holy cow, that is the food markets of all markets–it is ginormous!

Mmm burger pizza sounds fantastic too! I’m craving pizza, so maybe I’ll have it for lunch today?

You know what, Sophia, I often felt the same way about marriage. I never felt that I would find the right guy, and was also afraid of making that marriage bond. What if later we don’t get along? What if we discover that we weren’t right for each other? What if I have terrible kids? But, once again you are right. We wouldn’t want to close our minds to something that could bring us great joy!

Haha, my favorite grocery store is Whole Foods Market, obviously ;) . Love the hot foods bar! I also like Trader Joe’s and the local natural foods market in Seattle, PCC.

I LOVE discovering new supermarkets. People look at me like I’m crazy when I tell them how much I love grocery shopping. But I really do. So glad you had a fun blogger meet-up!

I did the Boca burger thing for a while as well…so not worth it. I actually prefer turkey burgers to beef burgers but I definitely see why the Boca doesn’t compare to real meat. The wrap looks delicious!

My favorite grocery store is Earth Fare (similar to a WF) but I haven’t been to WF yet!!!! So freaking sad. I know.

Closed minded? Well, lots of things actually. One being tattoos. Haha :)

Wegman’s are really amazing. I just love the whole European feel that they have to them!

I’m not a huge fan of those Bocas either. They just try too hard to be meaty and just fail epically!

I love fancy grocery stores. The Twin Cities has two great local fancy chains that I enjoy going to. Especially when they have samples.

Great way to use up freezer burned “meat.”

You know I was the same way with boys and marriage. Actually my fiancee is the only guy I’ve dated! Crazy, right?! But, he is just too perfect, it’s scary almost. We both grew up in Vegas and knew some of the same people, went to the same parks . . . chills! I think I was so insecure with myself I completely blocked any chance at any relationship. I’m the type of person, if I saw a guy that I liked or thought was cute, I would walk in the other direction and not make eye contact haha! That’s gonna get me real far, right? Anyways, don’t worry too much about it, but don’t be so closed to it. If it happens it happens and it’s wonderful :)
Your pizzas always look so freakin amazing, I made a falafel pizza one time, way better than boca. My fav is TJ’s hands down. I love whole foods too, but it’s so darn expensive and I limit it to every once in awhile or items I can’t find anywhere else :)

oh i love jasmine! but i have not seen natasha’s blog, i will have to check it out. sounds like you guys had a rad time. way to use super old freezer goods! the flatbread pizza looks tasty, but i hate the smelly of mcDs haha. fave grocery store is TJs hands down, wish i had one here!

I have been reading your blog for a while and I don’t know if I have ever commented. I just wanted to thank you for your honesty.

To me there was never a question in my mind as to my wanting to be married and have kids. I always assumed there were others on the opposite end too!

I do love a good grocery store…I could spend hours there!

i LOVE wegmans!!! it is really similar to WF, but the prices are unbeatable!

yay for fun blogger meet ups — and discovering something about yourself in the process! i always say “never say never” — life can change on a dime and i’ve found when i limit my outlook or make up my mind prematurely, i may be missing out on something great! so amazing you were able to see that :)

and amazing “fake meat” creation — i still love the stuff so i might have to give that a try!

Back when I was dieting really strictly I ate Boca’s all the time, and now I can’t even stand them thought of them! However, I bet they’d be pretty great on this pizza!

That pizza looks frekin’ amazing!! I’m droooooling. I’ll have to try out a cheeseburger pizza edition. And I used to like bocas, but agree that the fakiness is kinda gross. I don’t eat red meat (not fear of it, just because) and an occasional fake meat product is fine. But I’m not a huge fan!

That was an interesting read! Sad to know about Jasmine’s fate..but I really hope she recovers soon. Reading thru, I felt these people were really god sent to have changed your mind. Wishing you the very best! I did shut my mind to cooking until my marriage got fixed and since I felt I had no other option I reluctantly started and now I’m enjoying every bit :) Your pizza looks fantastic!

Your flat bread pizza sounds great. I can see however how bocca burgers are not your favorite choice for this dish… They are not my favorite meatless patty.

When I was young I DID NOT want kids. I had VERY strong feelings about this from a very early age. I’m not really sure why. Now, I can’t imagine not being a mom! I guess you never know… :)

I’m not a big fan of meat, especially not red meat, but I’m not quite ready to transition to vegetarianism. I’ve tried lots of meat substitutes and my least favorite tend to be the ones that try to be meat. I’d rather have a veggie patty that tastes like veggies than ones, like Boca burgers, that attempt to recreate the taste of meat. It doesn’t taste like meat and the texture is kind of blah.

Wegman’s rocks! I don’t have one near me but my sister does and she’s always raving about it. I can see why. I’m going to write to them and tell them they must open one up near me!! Seriously, my markets suck. How sweet to meet your/our fellow bloggers. Natasha sounds like a true sweetheart, just like she is on her blog. I used to force myself to eat Boca burgers until I discovered home-made bean burgers. Never again. They smell awful and taste worse. Your pizza looks delicious – farewell to the last of the Bocas!

You are so creative with your homemade flatbread pizza. My favorite grocery store is Trader Joe’s. Wegman’s looks really upscale and clean. Too bad there is none near me.

Wow, that sounds like so much fun! I’ve never heard of Wegmans, but it looks fantastic! I looked at their website, but they don’t have any stores near MI or AZ! Sad :( I love my Whole Foods, though.

I’m not sure I want to have kids either, but I think it’s great that you’re opening up to the possibility of marriage or kids. If you automatically shut out those options, you could miss out on a great opportunity. Even if you decide never to get married or have children, at least you had an open mind :)

And that pizza pretty much looks amazing! I really want to make that–I’ve got boca burgers in the freezer :D Love the ketchup + mustard sauce.

Wegman’s started in my area! I love it there… not as much as WF though but that’s because I grew up thinking of Wegmans as normal and dreaming of WF :)

I hate pickles on burgers so that’ll never be a pizza topping for me, and I’m with you on the fake meat- I gave away all of it last wknd, it’s just not worth it!

There’s nothing wrong with saying you don’t want kids. I NEVER do and have resolutely held that feeling for as long as I can remember. There’s no need to overpopulate the world and cause the Earth any more damage. I have a bf and he has accepted my views because as he says, I’m more important =)

Stay true to yourself– don’t let breeders dissuade you!
