I almost killed myself today. I’ll tell you the details later, but first let me share lunch.

Lunch was inspired by a Rachel Ray show that I watched about a week back. She was making prosciutto-wrapped chicken, which I always thought was kind of fancy. But if someone like Rachel who uses cutesy words like “E.V.O.O” and “Yum-o” can make a dish like that in under 30 minutes, hell yeah, so can I!

Rachel’s was stuffed with some kind of spinach-ricotta mixture, but I wanted to create my own filling with my favorite ingredients that I already had lying in the fridge. I also did not have any prosciutto, so I decided to use the last remaining turkey bacon. Here’s my take:

Bacon-Wrapped Chicken with Pumpkin, Goat Cheese, and Walnut Filling
Serves One

  • 1 large piece boneless, skinless chicken breast
  • salt and pepper
  • 1/4 cup pureed pumpkin
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled goat cheese
  • 4 strips turkey bacon

First slit the chicken breast lengthwise (not all the way through), then flattened it out by pounding it with my rolling pin. Then season it with salt and pepper.

Mix together the pumpkin, walnuts, and goat cheese, spread it over the chicken.

Roll the chicken, wrap each roll with bacon and secure with toothpicks. Season the outside of the rolls with salt and pepper.

Heat oil in skillet over medium-high heat. Brown the chicken evenly all over, 5 to 6 minutes. Transfer the chicken to a small baking sheet, place in the oven at 350 degrees and cook 15-20 minutes more until chicken is done.

Okay, now that was the directions I was supposed to follow. But of course, cocky, self-confident me did not refer to any recipes. No, I watched one show of Rachel Ray yabbering away while pulling out pre-made chicken out of nowhere and I thought I knew what I was doing.

Here’s what I did wrong:

#1: I got too happy pounding the crap out of my chicken (stress-reliever, anyone?) that my chicken looked like a sad, flat piece of torn rag. Seriously, there were holes in some places.

#2: I totally forgot to season my chicken. I only remembered after I had finished rolling up the chicken. Bad, bad, bad! How could I have forgotten? That is rule #1 in cooking!

#3: I didn’t cook the chicken enough.

Disaster? I think so. But when it came out of the oven, it looked pretty okay:

I’d somehow “glued” the holes in the chicken together by just pressing the flesh back together and covering it with the bacon. Though I’d forgotten to season it, I figured with the high sodium level in bacon and the strong flavor of the goat cheese, it wouldn’t be too bad.

But what was bad was that the chicken was half-cooked. I never checked up on how long I was supposed to cook it in the oven. Being greedy and impatient, I just followed my nose. It smelled good, so I became antsy and decided it was time to dig in.

Yum. I was half-way through this when I discovered that it was only about 70% cooked through. Holy shit.

Looks are deceiving, aren’t they? It looked perfectly cooked to me from this angle, but the undersides of the inner chicken was still pink. And I’d EATEN IT!

I jumped up and popped the chicken back into the oven to cook. Meanwhile, I frantically searched the internet to find out my fate for eating undercooked chicken. And the results were not too pleasant. Here were what some people said about undercooked chicken in Yahoo Answers:

"You will, undoubtedly, die. Call a lawyer immediately.

"It’s called food poisoning, first you get diarrhea then you get dehydrated then you die!!”

"I don’t know but I’m pretty sure it’s bad…for you”

"It can make you very ill. Starting with ecoli and salmonella to begin with. Good luck.”

Holy crap. I’m going to die. I felt my stomach. I checked my pulse. I sat there in a daze, waiting for some sort of painful symptom to come, consume me, and leave me dead with foam in my mouth.

Minutes passed. Nothing happened. The chicken in the oven smelled good again. I got up, removed the chicken from the oven, double-checked to make sure it was cooked all the way through, then finished it.

For your information, the chicken was pretty good. It would have been perfect with a bit more seasoning, but really nice with the sweet pumpkin, the tangy goat cheese, and the crunchy walnuts.

By the way, I still feel fine. But if you don’t find a new post up on my blog tomorrow, it may be because I’m already dead. Haha, kidding.

Question of the day: Ever had a similar case of kitchen disaster before? And why are the people in Yahoo Answers such insensitive jerks?

This combination of ingredients looks absolutely amazing. I can’t believe Rachael tried to get you like that though; I’m glad you’re alive and well!

ahh reasoning behind not eating meat..
its always so questionable if its good or not or raw or cooked or blah blah.. haha

Ive had the same thing happen! Glad you are ok!

My kitchen disaster-
I was preparing for a dinner party, and had read about making chocolate dessert bowls by dunking blown up balloons in melted chocolate. You then put the balloons in the fridge, and pop them when the chocolate hardens… Good idea in theory…

It worked fine at first… I dunked the balloons and set them on the counter. Then I leaned real close to look at them… Of course, the balloons popped, shooting hot melted chocolate from one end of the kitchen to the other. And I mean EVERYWHERE! I even had chocolate on my ceiling! I took me HOURS to clean it up, and was made even more difficult by the fact that some of the chocolate had shot its way into my eyes and I was practicially blinded…

Funny now, but not fun at all at the time :)

The chicken looks great regardless of being all done or not…I once had chicken in a restaurant that was actually still bleeding when I pulled off meat from the leg….needless to say it was sent back and I left the restaurant pronto! Would not take a chance eating there!

looks like i’m not the only one with a little food preperations scare! you know, we’re all very careful about raw meet but when i traveled to Korea, people didn’t care so much about it….i remember having kim chi and the meat was almost ready when they poured raw meat over top of the cooked meat to get the uncooked meat started, and then spooned the “cooked” meat, with bits of raw meat onto our plates. we ate because it would be rude to refuse. and we all lived in the end. nice to meet you.

Ah! I just read you are Korean! Tell me, is it a somewhat regular practice for people to mix cooked and uncooked meat in Korea? Or was it just my hosts? Also, it wasn’t kim chi we were making….it was Korean BBQ….sorry I’m half awake this morning.

I would be scared too, but I’m glad you ended up okay. I’m always paranoid when i entertain that I’m going to undercook something adn make everyone sick!

Eastern Europe, a whole lot of kebab and a whole lot of sick omnivore friends… that’s all I’m saying…

At THAT moment, I was really happy I’d gone vegan :P . But before I used to stuff my face with rare steak and rare any meat really. My mom obsessively overcooks meat and it turns into rubber. I don’t get why anyone at home still wants to eat it then, but whatever…

Honey, your not going to die as you probably noticed, those people from Yahoo answers are just jerks (funny, but jerks nonetheless).

Glad you’re still alive and don’t eat anymore raw meat! See it as an exercise in patiences :P

Funny story. Chicken can be tricky.

I once ordered chicken in one of Emeril Lagasse’s fancy restaurants in Las Vegas, and the chicken was totally raw in the middle. The setting was very romantic and there wasn’t a lot of light. By the time I figured out that the chicken was TOTALLY raw, I had already eaten quite a bit of it. Our waiter was horrified when I showed him, and we got most of the meal for free. And, I didn’t die! :)

I made your pasta dish (in creamy sun dried tomato sauce with red pepper and artichoke) on Tuesday and everyone LOVED it! In fact, the toddler has been eating the leftovers for every meal since then… :)

I’m so afraid of undercooked chicken that I sometimes over cook it!! And then I have to smother it with sauce because it’s dry. I think you’ll be fine if it was only a few bites. This looks wonderful!! I love the pumpkin in it. How delicious! Once in a while I have a disaster but none that stick out in my head.

hahaha you are too funny! blech, undercooked chicken!!!! i always have the opposite problem…i think it’s gonna be undercooked so i keep going til it’s all dried out and stringy. also, not so good :)

I was notorious for undercooking meat, especially stuffed meat! So I bought a meat thermometer and never looked back – get one that has a remote to it – you can be in the living room while the chicken cooks and it goes off at just the right temperature.

I haven’t over cooked or under cooked meat since I’ve had it.

Love your combo, just not sure about the pumpkin! :D

You are a genius! mmm . . . stuffed chicken is so good, and wrapped in bacon, heck yes! I always use a meat thermometer to make sure on temps. They usually say the dark meat should reach 180, but by then it will be nothing but dry rubbery crap. I usually take white meat out at 160, and let it rest covered in foil for carry-over cooking (about 5 degrees). When I’m cooking chicken breasts, I usually push on it and when it is slightly firm it is nice and moist, yum!

We have a joke in my family about chicken–we have had so many instances about chicken not cooking all the way through, it’s crazy. My dad once got chicken that wasn’t all the way cooked through at a restaurant, but then they gave us a free dessert. Haha.

I always marinate and/or spice up my Chicken overnight and cook it at least an hour in the oven, I always have one piece, the thickest one, that I use to test out while I am cooking too ;)

I have marinated chicken in Beer and it came out so juicy and tasty!

Don’t you just love Yahoo Answers. It drives me nuts sometimes that those are the first things that come up when you Google something now. They are rarely helpful.

Glad you are feeling okay. I freak out when that stuff happens too, but usually all turns out okay. Thanks for sharing the recipe. It sounds like something I would love, fully cooked of course. :)

It doesn’t matter if the chicken is undercooked, there will no health-problem about that.

There’re worst things in the kitchen that aren’t impossible to minimize, even cooked.

Hope you are fine and tomorrow too :) BTW the bacon wrapping the chicken is so cute-licious :)

So glad you didn’t get sick! I haven’t poisoned anyone yet, but I did spill pasta sauce all over the beautiful hardwood floors and white rugs in my parents’ kitchen over Christmas- oops.

Phew! Good thing you didn’t die. The Yahoo! Answers responses were kind of morbidly funny… The dish looked delectable, as always. You really should be cooking in some fabulous gourmet restaurant kitchen somehwere!
